I need to learn to make food other than pasta. After all, it was written “man cannot survive on carbs alone…” Carnations 4:4, and I don’t want to test it.

Someone teach me how to cook. Actually, no, I can probably figure that out - it’s more that I have no idea what to cook, ever. I don’t usually have a lot of time, and I… apparently don’t even know what normal people eat.

Lunch: whole wheat pasta, with Parmesan, garlic, tomato, broccoli, red pepper, and seasonings. I was getting desperate for real food that was also quick.

This is what happens when I have a day off (well sort of, I only have to do horse care for a few hours later this afternoon). Be productive? No. Go for a useless run and make delicious things to eat? Yes.

I found a couple easy recipes for protein bites/peanut butter kisses here on Tumblr, which I posted a couple days ago, and today I tried making one. They’re delish! I modified the recipe only in what fruit I used:

  • 1 cup Quaker oats
  • 1/2 cup all natural peanut butter
  • 1 oz dark chocolate chopped into small pieces
  • 2 tbsp honey
  • dried apricots cut into small pieces

Mash it all together and there you go. A quick, easy snack.

As part of the April No Excuses Challenge I made these little snacks. I cannot believe how good they are! It is seriously hard to eat just one! They took almost no time to make and are a great on the go snack but taste like dessert!

I adjusted the recipe a little but here is what I used:

1 cup Quaker Quick Oats
1/2 cup all natural peanut butter
1 oz dark chocolate cut into small pieces
2 tbsp honey
1/2 dried prunes cut into small pieces

Combine all ingredients and mix with your hands (have fun!). I made mine into 22 balls which put the nutritional facts at 77 calories, 9g Carbs, 4 g fat, 2g protein, 1 fiber

Have fun with the add ins! You could do nuts, raisins, protein powder whatever you want!

Made more protein balls. I always mix it up and I think I finally found one recipe that I like and enjoy and that isn’t too dry.  1 cup oats 1/4 cup peanut butter 1/2 teaspoon coconut oil 1/2 teaspoon chia seeds 1/2 teaspoon nutella  Cinnamon 1 tablespoon sugar free jelly 1/2 tablespoon honey
Take teaspoon, pour into hand, roll into ball.
I made like 32 balls.  Delicious- enjoy!!!!!!
